Ingredients

Steak

  • 24 oz. 1-inch thick boneless New York strip steak

  • Kosher salt

  • Ground pepper

  • 1 tbsp olive oil

Caramelized onions

  • 1 ½ tbsps olive oil

  • 2 yellow onions, sliced in rings

  • ½ tsp fresh thyme

Mustard-Mayo

  • ¾ cup mayonnaise

  • 2 tbsps sour cream

  • 1 tbsp whole grain mustard

  • 1 tbsp Dijon mustard

  • ⅛ tsp kosher salt

Sandwich

  • Ciabatta roll

  • ½ a cup of baby arugula

Instructions

  1. Season both sides of the steak with salt and pepper.

  2. Heat olive oil in a cast iron skillet, then sear the steak on high heat for 1 minute on each side.

  3. Cook on low heat for 7 to 10 minutes, then remove the steak from the skillet and let it rest for 10 minutes.

  4. Make the caramelized onions. Heat olive oil in a cast iron skillet, then add the onions and fresh thyme. Cook over medium heat for 10 minutes, stirring constantly.

  5. Make the mustard-mayo. In a mixing bowl, combine the mayonnaise, sour cream, whole grain mustard, Dijon mustard, and kosher salt. Mix well.

  6. Slice the steak into strips.

  7. Slice a ciabatta roll in half, and add a spoonful of mustard-mayo to both sides, followed by steak slices, caramelized onions, and baby arugula. Close up the sandwich, and dig in!
